GFA La Negly - LA FALAISE - AOP Languedoc La Clape - 2012
TERROIRS
Very stony sandy clay limestone, this terroir is located on the south east slopes of the Clape massif.
CÉPAGES :
65 % Syrah,
35 % Grenache.
VINIFICATION
Manual picking of the grapes in small crates at full ripening followed by a double selection of the grapes one by one.
Vinification takes place in wooden vats for the Syrah and in concrete vats for the Grenache.
The vatting period is between 45 and 60 days with manual daily stomping of the grapes.
ÉLEVAGE : In wooden vats for the Grenache and 300 litre barrels for the Syrah for a period of 12 months.
VINIFICATION
This wine has an intense ruby robe. The nose combines aromas of raspberry and blackberry with notes of chocolate and black olives.
The palate reveals aromas of liquorice and roasted coffee. This wine with its exceptional concentration has a finish of smooth perfectly ripe tannins.
It is advisable to let the wine breath for 3 hours before serving.
An ideal companion to a tournedos Rossini.
To be drunk within 4 to 10 years.
