D'origine espagnole, le mourvèdre s'adapte parfaitement aux sols et à la situation géographique du domaine.The Mouvèdre is of Spanish origin and adapts perfectly to the soil and geographic location of the domaine.
It is pruned short, the grapes are harvested manually and firstly sorted at the vine then at the cellar, and the sorting process is much more meticulous in order to exploit to a maximum the characteristics of this grape variety.
The harvest takes place at optimal maturity before vatting for a long period of time in wooden conical vats. This wine is harsh when young; the Mouvèdre needs several years of ageing to develop its full aromatic potential. This grape variety is often used in part of a blend, we have chosen to make this wine with mainly one grape variety (80% Mourvèdre, 10% Grenache Noir and 5% Syrah) this is what makes this wine stand out from the rest.
It is powerful and full at the same time and of a great finesse, tasting this wine will offer a touch of menthol and candied fruit. This cuvee is rare and unique and deserves to be associated with rich chocolate praline cake. L’Ancely is a prestigious cuvee and by far the most unusual in our range.
La porte du ciel.
(The gates to Heaven) the jewel of Château La Negly, is essentially created from two types of vines found at the entrance to the domaine, these parcels that were planted in 2001 are located on sandy clay limestone soil which is particularly stony.
The severe pruning and the soil being close to the main rocks grants us vines with a low yield. Some bunches are removed and the remaining grapes are vigorously sorted at the cellar so that the yield rarely exceeds 15hl/ha. The grapes are then selected “one by one” after which we press the grapes and start the vinification, only the most beautiful grapes are used in a wooden conical vat of 55hl.
After a careful vatting process without further crushing of the grapes the wines will start the ageing process in new barrels of 225L for 24 months. La Porte du Ciel is considered as nectar by us, the fruit of colossal work which requires more than three days of combined harvesting and selection, bottles are rare, and a maximum of 3500 bottles will be made available on the best years.
It is therefore a pleasure for us to share it amongst friends as an aperitif or at the end of a meal with a little sweet around a nice warm fireplace.
Le Clos des Truffiers
located on the highlands of the Saint Pargoire commune in Hérault the parcels of Syrah produce today, one of the greatest wines from Languedoc.
This Syrah is part of the oldest vines in Languedoc a valued Patrimony of the Family the first bottle of Clos des Truffiers saw the light in 1997.
This vintage, overflowing with history will propel the domaine as one with the best wines in the world. The 3.5 ha which constitute the totality of this cuvee are harvested manually and brought back to Château La Negly which is 50 kilometres away in a refrigerated truck. Once the harvest is delivered it is conditioned in 7kg crates and will be subjected to severe selection before being vatted in wooden conical vats for around 45 days of vinification. 24 months of ageing is necessary for the correct ripeness of such nectar. The tasting will provide very fine tannins, aromas of very ripe fruit also give off mineral notes with a strong concentration of truffle and light tobacco, for an extraordinary aftertaste. This elixir is the ideal accompaniment for a lièvre (hare) à la royale.
