The harvest is both manual and mechanic; direct pressing with entire bunches, cold clarifying, maceration on fine sediment for 4 to 5 days, then fermentation in temperature controlled vats at around 15°C.AGEING:3 to 4 months on fine lees.
The robe is pale and crystal clear. Its striking fruitiness gives off hints of lychee and exotic fruits. The thirst quenching palate is lively and fresh, great for an aperitif or with shellfish.Enjoy with oysters and whelks.To be drunk within the year.Serve chilled between 8 and 10°C.
